In God we trust, all others must pay.
Often people want to know, what does the pig taste like? To others this may seem obvious, but not everybody has been to a pig roast. I tell people that it will taste like "a pork chop" or fresh pork. Some times people get "roast pork" confused with bacon, ham or pulled pork. Bacon or ham have been "cured" in salt and smoked, that is why the ham and bacon are pink and salty. "Pulled" pork is usually a pork shoulder cooked long & slow till it falls apart. It will just shred very easily. It will look kind of stringy. I like to "chop" the pork in small pieces. I do not shred the pork because I find that it will "dry" out very quickly. The skin is almost always crispy and will have a smoky taste. The meat will have just a hint of smoke, even thought the pig is cooked over wood the skin blocks the smoke from the meat. Remember pig skin is thick, they make footballs from it. And most of all the fresh roasted pig is not "greasy". I find so many shall we say "un-educated" people who think the pig will be fat and greasy. Yes pigs have fat, but a 70-120 lbs. pig has little fat compared to the cuts of meat at the super market. Super market cuts, such as chops, ribs or hams are cut from large pigs, not roasting size pigs.

New Credit Card Rules
BBQ Picnic (not a Pig Roast) $880.00+ tax for the first
50 people. $16.00 for each person there after.
We arrive about 1 ½ before your serving time to set up the grill for the burgers &
dogs. The other food whether hot or cold arrives in professional catering food
carriers (Cambro) ready to be served. We will set out the food on tables you
provide and we will refill the food as needed. You will receive 2 ½ hours of grill
time after your serving time. Additional grill time can be ordered for $35.00 per
hour. This is a great package for back yard parties, office or business parties or
really just about anywhere. We can set up in a park or parking lot.
With this package you will get the following:

BBQ Pork (chopped or sliced with no sauce added) with rolls. Sauces mild & spicy served on the side.
BBQ Chicken assorted pieces glazed with mild sauce.
BBQ Beef Brisket (smoked) served with our homemade rum sauce.
BBQ Ribs (add $40.00) Smoked spare ribs made with our special rub and glazed with mild sauce.
Burgers & Dogs with rolls and condiments (cheese, ketchup, mustard & relish.
Paper plates, napkins and heavy plastic cutlery.
This is a great option for the office party at the park or a business meeting or club get together.

Macaroni & cheese.
Baked beans with sausage & apples.
Red skin potato salad.
Cole slaw.
Rice: Spanish style (tomato, peppers & onions) or
Yellow rice with beans.

The “Basic Pig Roast”: $680.00+ tax For the first 50 people. $4.50 for each adult thereafter. The basic pig roast includes the following: One USDA pig cooked (head on) over a hardwood charcoal fire. The smell of smoke & pork will fill the whole neighborhood The pig will be cooked from raw to finish at the location of your choice. Pig size will depend on the number of guests you are having. (pig for 50 people is about 70-75 lbs.) Cooking time is about 5 hours for 50 person pig and longer as the crowd increases. Also included are 2 homemade BBQ Sauces one mild and one spicy. We will cook, carve, serve and clean up any mess in the cooking area. We usually depart about 2 hours after serving time. Final payment is due upon completion of the roast.
Basic Pig Roast with BBQ Chicken: $770.00+ tax and $7.75 for each adult after the first 50 people. Same as Basic Pig Roast but with smoked chicken cooked with mild BBQ sauce.

Chicken or Brisket is slow smoked at our location the night before and brought
back to serving temperature at your location.
Brisket is sliced and served with our homemade rum sauce.
Chicken is glazed with mild bbq sauce.
Burgers and Hot dogs. Only available when added to one of the above pig roasts.
$135.00+ tax when added to a 50 person pig roast and $2.25 for each person thereafter. includes 40 Hamburgers, 40 Hot dogs, Rolls and condiments such as cheese, ketchup, mustard and relish. (we always have extra burgers and dogs on hand should you need more).

The following items can be ordered and delivered locally or added to your pig roast order above. Fresh Smoke Roasted Pork: $98.00+ tax per pan. Each
pan will serve about 25-30 people. Pork is chopped in medium size pieces which is perfect for sandwiches or eat it right from the plate. You will also get our 2 homemade BBQ sauces, one mild and one spicy. This is the same meat you would get from a roasted pig. Makes a great alternative to roasting and carving the pig. Smoked Pork Loin (sliced): $100.00+ tax per pan. Each
A pan will serve about 25-30 people. Loin is lightly to medium smoked and then sliced. Loin meat is white pork with a pink smoke ring around the outer edge. Includes our homemade mild & spicy sauces. BBQ Beef (Top Round): $100.00+ tax per pan. Each
Each roast weighs approximately 23-25lbs. (before cooking). Cooked in the same fashion as the pig, over a hardwood fire. Then it is thinly sliced and served either hot or cold. Includes our homemade sauces. Beef Brisket (Smoked): $100.00+ tax per pan. low with our special rub and then sliced thin. Includes our homemade sauces. Smoked Wings: $65.00+ tax per pan.. About 70-80 pieces.
Chicken wings rolled in my special dry rub, smoked over cherry wood and covered with a mild or spicy sauce. A great way to start any big party. These are our most requested item to be added to a pig roast. BBQ Spare or Baby Back Ribs (pork): $115.00+ tax per pan.
Approximately 60 ribs. covered with a secret wet rub of spices and smoked over cherry wood. Then they are glazed with BBQ sauce and ready to eat. If you're a true fan of BBQ food you will love these. Includes our homemade sauces. Lightly Smoked Turkey Breast (2 per pan) $90.00+ tax

Each will serve about 25-30 people. Brisket cooked slow and

choice for those who would like to add something different
to their pig roast. I must say this is a personal favorite of
mine. For guests who may not eat pork or want to eat light,
white turkey breast is great. Eat it plain, with sauce or with
a green salad.

Credit Card Customers Please take note: Due to the drastic increase in credit card processing we will start charging 2% fee for all purshases using Visa or Master Card. American Express purchases will be 3%. However you can still reserve with credit card by phone and there will be no processing fee. This will allow you to lock in your date quickly without the extra charge. Athough you will receive a $5 fee if you cancel and we return the deposit to your card.

The breakdown: Have Pig Will Travel is a small catering business. I provided credit card payment options for my customers several years ago to make it easier for business customers to pay without the dreaded purchase order process. I do not take or will never take PO's or purchase orders as it is a slow... slow system of "me" getting paid. But due to the increase in processing fees, American Express being the worst, I may have to drop the credit card thing all together. The fee that I am passing on to the customer in no way makes it free for me to process your purchase. I still pay mechant account fees and all the little hidden stuff they throw in. Passing the fee to the customer is nothing new many companies do it, including your local gas stations.
When paying for a purchase for on-site catering or delivered food the physical credit card should be present. If the card can not be swiped due to a bad strip or is not present you will receive an additional 1% fee on top of the 2% or 3% fee. Why? Because that is what the bank does to me. Fun isn't it. They think of everything they can to get money. The card must be present for swipping and an impression, this proves to the bank that I physicaly had the card in my hand at the time of sale.
As always you can make payment by check or pictures of dead pesidents or Ben Franklin. Business checks or personal checks are fine. Out of state checks are not a problem either.
