We cook for all occasions. Birthdays, surprise parties, christening, baptisms, company gatherings & picnics, grand openings, weddings, graduations, club events, homecomings, divorce and many more. We can handle crowds from 50 and up. Large crowds of 500 or more require as much notice as possible.

Often people want to know, what does the pig taste like? To others this may seem obvious, but not everybody has been to a pig roast. I tell people that it will taste like "a pork chop" or fresh pork. Some times people get "roast pork" confused with bacon, ham or pulled pork. Bacon or ham have been "cured" in salt and smoked, that is why the ham and bacon are pink and salty. "Pulled" pork is usually a pork shoulder cooked long & slow till it falls apart. It will just shred very easily. It will look kind of stringy. I like to "chop" the pork in small pieces. I do not shred the pork because I find that it will "dry" out very quickly. The skin is almost always crispy and will have a smoky taste. The meat will have just a hint of smoke, even thought the pig is cooked over wood the skin blocks the smoke from the meat. Remember pig skin is thick, they make footballs from it. And most of all the fresh roasted pig is not "greasy". I find so many shall we say "un-educated" people who think the pig will be fat and greasy. Yes pigs have fat, but a 70-120 lbs. pig has little fat compared to the cuts of meat at the super market. Super market cuts, such as chops, ribs or hams are cut from large pigs, not roasting size pigs.

BBQ Picnic (not a pig roast) $850.00+tax for the first 50 people and $17.00 per person after the first 50 people.
Package includes the following items: Our shredded smoked pork bbq, smoked chicken, burgers & dogs, our famous baked beans with sausage & apples, mac & cheese, corn on the cob & fruit salad, extra homemade bbq sauces (mild & spicy), paper plates, plastic cutlery and napkins. This is the perfect option for the office or business luncheons. We arrive about an hour before serving time and prep the grill and set up the food for serving. Need to accomodate your vegetarians? Ask about our stir fry and other veggie options.

The “Basic Pig Roast”: $675.00 for the first 50 people, $4.50 for each adult thereafter. The basic pig roast includes the following: One USDA pig cooked (head on) over a hardwood charcoal fire. The smell of smoke & pork will fill the whole neighborhood The pig will be cooked from raw to finish at the location of your choice. Pig size will depend on the number of guests you are having. (pig for 50 people is about 70-75 lbs.) Cooking time is about 5 hours for 50 person pig and longer as the crowd increases. Also included are 2 homemade BBQ Sauces one mild and one spicy. We will cook, carve, serve and clean up any mess in the cooking area. We usually depart about 2 hours after serving time. Final payment is due upon completion of the roast. (does not include plates, rolls, other food or drinks, or sterno pan/rack, hence the word "BASIC".)

Basic Pig Roast with BBQ Chicken: $765.00 and $7.50 for each adult after the first 50 people. Same as Basic Pig Roast but with smoked chicken glazed with mild BBQ sauce. Like all our smoked meats we use apple or cherry wood and the chicken is slow smoked for several hours the night before your party. We will sauce and bring up to temp for your serving time. (does not include plates, rolls, other food or drinks, or sterno pan/rack, hence the word "BASIC".)
Burgers & Dogs: $125.00 for the first 50 people $1.85 there after. Added to one of the above packages. Includes the following: hamburgers & hot dogs, rolls, ketchup, mustard, relish and cheese. We bring our own grill and cook fresh on site.
We flip the pig every 30 minutes.

Meat smoke cooked, low & slow using dry hardwoods.
We cook pigs in our custom built roasters and we smoke all meat using a Kustom Kingfisher Kooker.

Sausage, peppers & onions (smoked) $75.00 (per full size pan) Smoked Italian sausage with peppers & onions.
Smoked Wings $65.00 (per full size pan). Wings smoke cooked and mild or hot sauce added. Just the thing to get the party going. Our wings are NOT breaded. They are plain wings we coat with our special rub and slow smoke. Not crunchy but the fall off the bone everytime.
Pulled Pork: $98.00 (per full size pan). Pork shoulder smoked for hours, then shredded. No sauce added. Includes our homemade mild & spicy sauces. This is the "real deal" for the pork BBQ lovers, I think it is better the roasted pork.
Beef Brisket: $100.00 (per full size pan). Beef brisket smoked for about 9 hours and glazed with our own whiskey glaze. Sliced. Includes our homemade whiskey glaze. Cooked "Texas" style but "glazed" Jersey style.
Smoked Pork Ribs $100.00 May the best item on the menu. Pork ribs smoked with dry rub and then sauced. We mostly cook "baby backs" but you can requests "spares".
Smoked BBQ Chicken $65.00 (per full size pan). Chicken smoke cooked using mild hardwoods like cherry or apple. We use our own special rub and glaze with mild sauce. Breast (cut small), drumstick and thigh (no wings).
Baked Beans with apples & sausage $40.00 (per full size pan). For bean lovers this dish just says "BBQ".
Mac & Cheese $35.00 (per full size pan). Need I say more. Mac & cheese made with elbow noodles & mild cheddar sauce. Everyone loves this picnic standard, from the little tykes to the old codgers.
Corn on the cob $35.00 For first 50 people. When in season, we buy fresh the day of or day before the party. This is an on-site only item.
Anyone who knows me and knows catering pricing/food cost knows I have very reasonable prices and I do my best to keep the final cost down. If for some reason you think my pricing is too high, please do waste you time or mine with your bargain hunting phone call. Charities: I go above and beyond in my personal life with a charity that is dear to my heart. So please do not call me with the grand promise of "how, if I cook for your charity my life & business will be so much better."
Prices on this page can change at anytime and I try to give customers a heads up. At this time (5/20/2010) chicken wing prices are at an all time high because of demand. I am sure young Frank is trying his hardest to grow chickens with 10 wings. Pork prices and futures are really climbing. Beef: well beef is always climbing. Lamb: I quit pricing that a long time ago.
The point here is; I do my best to keep prices down.
